THIS IS FROM ZOE

Sweet and sour German red cabbage the way my German Mom taught me how to do it.

Ingredients:
1 red cabbage
2 apples
1 sweet onion
6 slices bacon fried or use oil or butter instead
1/4 cup cider or red wine vinegar (per batch)
1/4 cup brown sugar (per batch)
1/2 cup water (per batch)

Chop up the cabbage and cut or shred into small pieces. then chop up the sweet onion and 2 apples into small pieces. Next fry up 6 pieces of bacon, remove them and tear them in small pieces and set them aside. Skip the bacon step if you don't want the bacon and instead add butter or oil to grease the frying pan.

Next I poured off the bacon grease but didn't wipe the pan and added (in 2 batches) the cabbage, onion and apple and sauted it in the bit of bacon grease for a few mintues. Then I mixed up 1/4 cup cider vinegar and 1/4 cup brown sugar and 1/2 cup water per batch and added that to the cabbage mixture and brought it all to a boil and then simmered for a bit. I then poured that into the crock pot and did the second batch. Once both batches were in the crock pot I added the bacon and cooked for 4 hours on low. It is so YUM. You can do it without the bacon and use a little butter or oil to saute the cabbage at the beginning.

If you don't have a crock pot then just simmer on the stove for a hour or so.

Something I whipped up for someone's grandparents ;)

Red Potatoes(cubed)
Asian Pear(or apple if you can't find it, cubed)
Mayonnaise
Mustard
Fennel Seed(or fresh Fennel)
Salt/Pepper
Cooked Egg Yolks
Parsley
Lemon Juice
Balsamic Vinegar


All the above ingredients is to your taste so play with amounts ;P
It's basically a Potato Salad...

cook the potatoes of course :D

Thanks, dear tec (peace to you, luv!). I can't post the recipes (because she won't give them to me), but daughter made us some of THE best gumbo and sweet potatoe casserole dear hubby and I have ever eaten! There was NO casserole left... and we brought some gumbo home (for hubby's lunch or dinner, whichever... but not only did I not have to cook yesterday, but I'm not cookin' today, either (the crowd goes wild)!!!).

But get this: three times in a row, now, dear hubby... who SWEARS he HATES macaroni and cheese... has eaten daughter's at Thanxgiving, and not only raved about it... but asked for SECONDS!! I'm like... wait... AGAIN... dear hubby: YOU don't EAT macaroni and cheese!! His response:

"Well, what can I say? I like HER macaroni and cheese!"

Uh-huh. UHhhh-HUH! Good thing I only like the ooey-gooey, fake-cheesey kind of macaroni and cheese. Else, I could take issue with that. Be insulted even. But even I know that the boxed, loaded with Yellow Dye #whatever... kind of mac n' cheese (see, they don't even CALL it "macARONI and cheese" - LOLOLOL!) is tantamount to (some kind of) poison. Gotta be... 'cause kids prefer IT almost over candy! Only thing close is pizza!

So... I don't push it! I don't even buy/make it any more - LOLOLOL!

Just a little something to share to wake ya'll up (if you're not already awake - for the day, I mean - LOLOLOL!)

LOl... and Yum.

I don't think Canada uses that unsafe # whatever dye in the KD. Or maybe it is another country. I can't remember. I read it somewhere that someone was protesting its use when other places have taken it out.

Ok, never had Mack n cheese. Tried a mouthful of the frozen stuff years ago and wasn't impressed. Anyone got a home made recipe please?

Here's my recipe, dear Loz (mornin' and peace to you!)... although I haven't made it in awhile ('cause hubby "doesn't like" mac and cheese... althoug he did eat this when I made it - LOLOL!). The ONLY difference between mine and daughter's ('cause I taught her how to make it to start with) is that she made an "improved" version that calls for a lah-di-dah "bechamel" flour, cream, and cheese sauce (rolls eyes at daughter... and hubby.. as that's just WAY too much effort for ME! LOLOLOL!). You can cut recipe in half for smaller amount, as this is "Thanksgiving-having-folks-over" size:

2 boxes of pasta (you can use elbows, shells, rotini, whatever)
2 cups Velveeta* cubed and .5 cup shredded
2 cups jack cheese cubed and .5 cup shredded
1 cups sharp cheddar "crumbled" (smaller cubes) and .5 cup shredded
1.5 cups heavy cream
1/2 stick butter (NOT margarine - blech!)
2 large or 3 small-medium eggsbeaten
1 Tablespoon extra virgin olive oil (optional)
2 teaspoons salt
1/2 teaspoon white pepper
1/4 teaspoon course ground black pepper


*Not sure if you all have that; if not, about the same of "American" cheese...


Preheat oven to 350.

Cook pasta to "al dente" in water with 1 teaspoon of sea salt... and, if you want it firm and "shiney/slippy" like I like it... the olive oil

While pasta is cooking, make cheese sauce:

In a saucepan over low-med heat while stirring (so it doesn't stick) until fully melted:

Cubed cheese
1 cup of cream
1/4 stick of butter
.5 teaspoon of salt
All of white pepper


Drain pasta and when cheese sauce is melted layer the two in a large baking pan sprayed with cooking spray (note: if you care/like REALLY "crispy edges", coat baking pan with softened butter rather than spray).

Whisk eggs with remaining cream then LIGHTLY mix completely in (the prior layering helps keep cheese from "chunking up" in parts of the dish)

Sprinkle top with shredded cheese, then
Distribute evenly over that little "pats" of remaining butter, then
Sprinkle over that remaining salt and all of black pepper

Bake at 350 degrees until "brown" on top, about 45-50 mins. If you want top REALLY brown, put under broiler for last 15 mins of baking.

Now, if you want portions REALLY crispy... and on more than 1-2 sides (like the "corners" often are), I saw this on a cooking show:

Let casserole cool, then refrigerate over night. Next day, cut casserole into square portions. Heat a pan, add a little vegetable oil, the "fry" EACH side of the square until golden brown.

OMGoodness - with that last tip, I think I'm gonna make a small casserole and try this! See if hubby'll like THAT! LOLOLOL!

Is the jack cheese... monteray jack, Shelby?

Also, does it matter if the cubed bits are cubed, or can they be shredded also, since you're just melting it anyway, right? (I like to buy the pre-shredded stuff, lol)


Because that sounds SO good. I am gonna have to make it tomorrow. (I work tonight or I would do it right now)

Oh, ooops, yes, Monterey Jack... versus, say, pepper jack, colby jack, etc., although if you like those flavors, why not?... dear tec (mornin' and peace to you... and please forgive - we cut the HECK out of words/phrases here! Like "delish" instead of "delicous"... "veggies" instead of "vegetables", etc.).

You can use shredded throughout, yes, but I find you don't get the same "pockets" of creamy cheese when you do. The cheese tends to "dry-out" because the shreds are so thin. When you use cubes, however, more moisture is retained, hence that "creamy" bite from time to time!

I think I'm gonna make it tonight, too, luv, as I have ALL of the ingredients (except sharp cheddar). I'm thinkin' of trying it with Havarti, though, which I DO have... and LOVE! Oooh... not just creamy... but STRETCHY, too?! Dear hubby doesn't have to even have a BITE - I will make the half-sized (i.e., "Shelby" sized - LOLOL!) casserole... and let him just drool while watching me eat it! LOLOLOL! Nahh, I'll share. I mean, if I HAVE to - LOLOL!

Sigh. Didn't get to it last evening, dear ANOMOS (mornin' and peace to you!) - When I got home we were both tired and neither of us were hungry for ANYTHING (I had no appetite and dear hubby had had a late lunch)... so we skipped dinner. Have a date with dear hubby tonight, so won't be tonight. MAYBE gonna make a "real" dinner (vs. "heat and eat") tomorrow. Not sure, as I have an afternoon gig to do so it'll depend on how I feel when I get home. If so, I will do the whole shindig (mac-n-cheese, hocks, maybe even daughter's sweet potatoe casserole) and post pics tomorrow night. If not, then I will do Monday (so's I don't hafta cook Tuesday or Wednesday)... and post 'em then.

How's that? For me, I mean. Everyone else'll have to let you know for them - LOLOL!
