First off, why put ANY limitations on an "omnipotent" being?
God can be/is anything that God can be/is.
If God is a Triune being , then that is what God is and why can't He be that since, after all, He is God, right?
The only logical inconsistency that God can be is if God were what he is NOT.
And that is not the case.
That those verses speaking in the plural denotes that God Created with another and that other we know to be Our Lord, the Word of God, Jesus.
FOr a Christian. it is right to read the OT WITH the understanding that has been given by the NT.
